About The Fish Project

The Fish Project is a fast-growing, quality-focused seafood concept known for fresh ingredients, high standards, and a consistent, delicious menu. Operating multiple permanent locations and large-scale festival units, we deliver the same level of quality whether serving 50 guests or 5,000.

We are now looking for an experienced and motivated Head Chef to join our management team and oversee kitchen operations across all locations.

Role Overview

The Head Chef at The Fish Project is responsible for maintaining our high standards of quality, consistency, hygiene, and efficiency across the entire brand. This is a hands-on leadership position requiring strong operational skills, menu knowledge, and the ability to coordinate with kitchen teams in different units.

Key Responsibilities

  • Oversee kitchen operations at all The Fish Project locations, including restaurant units and festival setups

  • Train, supervise, and motivate kitchen teams (new hires + ongoing development)

  • Ensure consistent preparation and presentation of core products across all units

  • Maintain strict hygiene and HACCP procedures

  • Manage inventory, ordering, supplier communication, and stock rotation

  • Control food costs, portion sizes, and reduce waste

  • Implement and maintain kitchen routines, prep lists, and daily checklists

  • Support festival and event operations with planning, prep, and execution

  • Conduct regular quality checks and ensure recipes are followed exactly

  • Work closely with management to improve efficiency and menu consistency

  • Participate in recruitment and scheduling of kitchen staff

What We Expect From You

  • Proven experience as Head Chef or Sous Chef in a high-volume kitchen

  • Strong leadership abilities and a structured, disciplined work approach

  • A passion for fresh seafood and consistent product quality

  • Ability to manage multiple locations and teams

  • Deep knowledge of kitchen operations, cost control, and HACCP

  • Calm and solution-oriented mindset, even under pressure

  • Strong communication skills and a positive attitude

  • Flexibility to work weekends, evenings, and at major festivals
